Ennai kathirikai kulambu or brinjal curry

Kathirikai or brinjal or eggplant or aubergine,is a very low calorie vegetable and fats. Brinjal has glossys skin unique taste and spongy&cream coloured flesh.it helps maintain of hair ,skin,nails.how to make ennai kathirikai kulambu .

INGREDIENTS

oil-2tsp

mustard-1/2tsp

fenugreek seed-1/2tsp

asafoetida-1tsp

small onion-10

garlic-7

curry leaves

brinjal-7

chilli powder-1tsp

tumeric powder-1/2tsp

sambar powder-2tsp

tamarind-lemon size

salt

coconut-1/2

tomato-1/2

FOR PREPARATION

1.Soak tamarind in hot water for 10 min.

2.In a mixie,add coconut,chilli powder,tumeric powder,sambar powder ,add little water[1/2cup]and grind like fine paste.

3.Cut  the brinjal.

METHOD

1.Take a kadai,put the oil and when it is hot add mustard ,fenugreek asafoetida,curry leaves let is splutter add small onion,garlic fry for few mintues.

2.Now add the brinjal,tomato and add a water if required[1 to 1 and 1/2 cup]

3.Cook until the brinjal are cooked .

4.Then add the tamarind juice,grind coconut paste,add enough salt and cook for 5 min.

5.Mix and stir well.

6.After 5 mintues,ennnai kathirikai kulambu is ready to serve with rice,idly,dosa
